Banana Bread

  1. Measure ¼ cup butter, allow to come to room temperature
  2. Apply a small amount of butter to loaf tray
  3. Preheat oven 175ºC / 350°F
  4. Whisk in a small bowl
    • 1 ½ cups *spooned* flour
    • 1 ½ tsp baking powder
    • ¼ tsp salt
  5. Mash and whisk in a separate small bowl
    • 3 bananas
    • 1 tsp baking soda
  6. Whisk in a separate small bowl
    • 2 eggs
  7. Mix in a large bowl
    • ¼ cup softened butter
    • ½ cup brown sugar
    • 1 tsp vanilla extract
    • Add and whisk in banana mixture and eggs
    • Add and gently whisk in flour mixture
  8. Pour into loaf tray, optionally sprinkle chocolate chips into batter
  9. Set 1 hour timer
  10. Place in oven
